which the passage defines as employers secretly hire outsiders and disguise them as custoemrs.
The professor provides an example of big restaurant manager. The manager decide to evaluate their employees. But already employees were aware of evaluation it is no use. So, the manager hire other custmer like regular customer. They cannot be aware of it. They order foods and obserbve them and back to ther manager. After then, the manager decide to employ their employees or not.
