She states that restaurant manager tries to evaluate his employee but since employees that know about test wear on mask. So they cannot evaluate. So manager hire test customer acting like regular customer.
They don't know about their evaluation. So they act like reality. After that, they go back to manager. And so the example clearly illustrates test customer.
